What does the nozzle of a pressure jet burner do to the oil?

pressurize it
Vaporize. The high speeds cause a very low pressure drop which quickly evaporates the oil molecules for very fast and efficient burning. By turning everything to a gas you greatly increase the turbulence which speeds up combustion.
